Building Your Starter 

Before any recipe, you need a starter. If you don’t have one already, here’s the short version: combine 50 grams of bread flour with 50 grams of water in a clean jar. Stir, cover loosely, and leave at room temperature. The next day, discard half and feed it 50 grams of bread flour and 50 grams of water. Repeat daily. Within five to ten days — depending on your kitchen’s temperature — you’ll have a bubbly, active culture that doubles in size within four to six hours of feeding.

Recipe #1: The Everyday Country Loaf 

This is the loaf to master first. It’s a moderate hydration (75%), uses mostly bread flour, and produces a classic open crumb with a thick, chewy crust. Total time from mix to oven is roughly 24 hours, most of which is hands-off.  

Ingredients (weighed, not measured by volume):

- 100 grams active sourdough starter 

- 375 grams of warm filtered water

- 500 grams of bread flour 

- 10 grams fine sea salt 

Method:

In a large mixing bowl set on your Escali scale, tare and add the starter. Tare again, add the water, and whisk to dissolve the starter. Tare once more and add the flour. Mix by hand until no dry flour remains, then cover and rest for 1 hour. Set a timer — this is your autolyse, and it dramatically improves dough extensibility. 

After resting, sprinkle the salt over the dough along with a small splash of water, and work it in by gently pinching and folding. The dough will tighten up as the salt dissolves and integrates. 

Begin bulk fermentation. Over the next four to five hours at room temperature, perform four sets of stretch-and-folds spaced 30 minutes apart. Use your timer to track these intervals — they’re easy to forget, and skipping one will cost you structure. The dough is ready when it has risen by roughly 50%, shows visible bubbles on the surface and sides, and feels billowy and alive. 

Shape the dough into a tight round, place it seam-side up in a floured banneton or towel-lined bowl, and refrigerate overnight (8 to 14 hours). 

The next morning, preheat your oven to 500°F with a pizza stone or Dutch oven on the middle rack. Let it heat for at least 45 minutes — a properly preheated stone is non-negotiable for good oven spring and crust development. Bake at 500°F for 20 minutes, then reduce the temperature to 450°F and bake for another 20 to 25 minutes until the crust is deeply browned and the internal temperature reads 205°F. 

Cool on a wire rack for at least an hour before slicing. Cutting too early releases steam and leads to a gummy crumb. 

Recipe #2: Whole Wheat Honey Sourdough 

A softer, slightly sweet variation that’s wonderful for sandwiches and breakfast toast. The honey adds subtle flavor and a beautifully tender crumb; the whole wheat adds depth and nutrition. 

Ingredients:

- 100 grams active starter 

- 350 grams of water 

- 30 grams of honey

- 300 grams of bread flour 

- 200 grams whole wheat flour 

- 10 grams of salt 

Follow the same general method as the country loaf, but expect slightly faster fermentation due to the whole wheat — start checking your bulk rise at the three-hour mark. Whole-grain flours ferment more aggressively because they bring their own microbial population. Set a timer to check the dough every 30 minutes during the final hour of bulk so you don’t miss the window. 

Bake on the same preheated pizza stone, dutch oven, or bread oven at 475°F for 20 minutes, then 425°F for 20 more. 

Recipe #3: Sourdough Pizza Dough 

If you have a pizza stone, you owe yourself a proper sourdough pizza. The slow fermentation develops flavors that commercial pizza dough simply can’t match, and the high-heat bake on a thoroughly preheated stone produces a leopard-spotted, blistered crust with a tender, airy interior. 

Ingredients (makes 4 pizzas):

- 100 grams active starter 

- 400 grams of water 

- 600 grams “00” flour or bread flour 

- 15 grams of salt 

- 20 grams olive oil 

Mix all ingredients except salt and let rest for 30 minutes. Add the salt, then bulk ferment for four hours with two sets of folks in the first 90 minutes. Dive into four 270-gram balls (weigh them— equal-sized balls bake more evenly), shape into tight rounds, and refrigerate for 24 to 72 hours. The longer cold ferment produces noticeably more complex flavor. 

When you’re ready to bake, preheat your pizza stone at 500°F (or the highest setting your oven allows) for 45 minutes. This is where the thermal mass of a good stone really shines — it absorbs and stores heat, then releases it into the dough the instant the pizza hits the surface. A thinner sheet pan can’t do this. Stretch each ball by hand into a roughly 10-inch round, top sparingly, and bake one at a time for 6 to 8 minutes. Use a timer — at 500°F, the difference between a perfect pizza and a charred one is about 90 seconds. 

Recipe #4: Sourdough Discard Crackers 

Every sourdough baker accumulates discard — the portion of starter you remove before each feeding. Don’t throw it away. These crackers are crisp, savory, and addictive, and they use up the discard beautifully. 

Ingredients:

- 200 grams sourdough discard 

- 30 grams olive oil 

- 5 grams of salt 

- 20 grams of herbs (rosemary, thyme, sesame seeds — your choice)

- Flaky salt for finishing 

Whisk together the discard, oil, salt, and herbs. Spread the mixture as thinly as possible into a parchment-lined baking sheet using an offset spatula. The thinner you spread, the crisper your crackers. Bake at 325°F on your preheated pizza stone (placing the sheet pan on top of it) for 25 to 35 minutes, rotating halfway through. Set a timer — these go from underdone to burnt quickly. While still warm, score into rough shards and sprinkle with flaky salt. Cool completely before breaking apart.
