Cold, cooked rice gets tossed with tender chicken, fluffy scrambled eggs, and colorful vegetables, then coated in a quick homemade sauce made with soy sauce, honey, and fresh garlic. Everything comes together in one pan for a flavorful meal that's perfect for busy weeknights and an excellent way to use up leftover rice. 

 

Ingredients: 

  • 3 cups cooked, cold rice (day-old is best)
  • 2 chicken breasts, diced small, or 2 cups leftover shredded chicken
  • 3 eggs, beaten 
  • 2 tbsp soy sauce + 2 tbsp honey + 2 cloves garlic, minced (the “sauce”) 
  • 1 cup frozen peas and carrots 
  • Oil for the pan 

 

Steps: 

  1. Heat oil in a wok or large skillet over medium-high heat. Cook diced chicken until golden and cooked through (165°F internal temp), about 5-6 minutes. 
  2. Push chicken to one side, pour in eggs, and scramble until just set. 
  3. Add rice, breaking up clumps, then stir in peas and carrots. 
  4. Whisk together soy sauce, honey, and garlic, pour over the rice, and toss everything together for 2-3 minutes until glossy and hot throughout.
