Ingredients — Dough
- 480ml (2 cups) whole milk, warmed to 110°F
- 7g (2 ¼ tsp) instant yeast
- 100g (½ cup) granulated sugar
- 2 large eggs
- 85g (6 tbsp) unsalted butter, softened
- 1 tsp fine salt
- 600g (5 cups) all-purpose flour, plus more for kneading

- 85g (6 tbsp) unsalted butter, very soft
- 120g (½ cup) light brown sugar, packed
- 2 tsp ground cardamom
- ½ tsp cinnamon
- 3 tbsp good honey
- 115g (½ cup) cream cheese, softened
- 180g (1 ½ cups) powdered sugar
- 2-3 tbsp whole milk
- 1 tbsp honey (for the glaze)
Instructions
- In a large bowl, combine warm milk, yeast, and 1 tsp of the sugar. Let it sit for 5 minutes until foamy.
- Whisk in the remaining sugar, eggs, and softened butter. Add flour and salt. Stir until a dough forms, then knead on a floured surface 8-10 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let rise until doubled — about 1 to 1.5 hours
- Mix the filling: combine soft butter, brown sugar, cardamom, cinnamon, and honey into a paste.
- Punch down the dough and roll it into a roughly 12x18” rectangle. Spread filling evenly to the edges.
- Roll up tightly from the long side. Cut into 12 equal rolls using dental floss or a sharp knife.
- Arrange in a greased 9x13” baking pan. Cover and let rise 30-45 minutes until puffy.
- Preheat oven to 350°F. Bake 25-30 minutes until golden brown on top. Check the center roll for doneness — it should spring back when pressed.
- While rolls cool slightly, beat together cream cheese, powdered sugar, milk, and honey until smooth. Spread over warm rolls and serve immediately.
