Quinoa Grain Bowls are a fresh, colorful meal prep staple that's packed with plant-based protein, fiber, and vibrant vegetables. These customizable bowls come together with fluffy quinoa, crispy roasted chickpeas, crisp veggies, and a creamy homemade tahini dressing, making them perfect for healthy lunches or light dinners throughout the week. Ingredients (makes 4 bowls):

  • 2 cups dry quinoa
  • 1 can chickpeas, drained and roasted
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup shredded cabbage 
  • Tahini dressing (tahini, lemon juice, garlic, water) 

Directions: 

  1. Cook quinoa per package instructions. Let it cool.
  2. Toss chickpeas in olive oil, cumin, and salt. Roast at 400°F for 25 minutes.
  3. Assemble bowls with quinoa as the base, then top with veggies and chickpeas. A Lexa Bamboo Salad Bowl is great for tossing everything together before portioning.
  4. Store dressing separately. Add just before eating. 

Swap it up: Use farro or brown rice instead of quinoa. Add roasted sweet potato for extra heartiness.
