These peanut zucchini noodles are a fresh, flavorful way to turn simple vegetables into a satisfying meal or side dish. Crisp bell pepper and tender zucchini are quickly stir-fried before being tossed in a creamy peanut sauce made with soy sauce, rice vinegar, honey, and garlic. A sprinkle of crushed peanuts and fresh cilantro adds the perfect finishing touch and a little extra texture. 

 

Ingredients

  • 4 medium zucchini, spiralized or cut into thin ribbons 
  • 1 red bell pepper, thinly sliced 
  • 2 green onions, sliced 
  • 3 tbsp peanut butter 
  • 1 tbsp soy sauce 
  • 1 tbsp rice vinegar 
  • 1 tsp honey 
  • 1 garlic clove, grated 
  • Neutral oil 
  • Crushed peanuts, cilantro 

 

Method 

  1. Whisk peanut butter, soy sauce, rice vinegar, honey, garlic, and a splash of warm water into a smooth sauce. 
  2. Heat oil in a wok over high heat. Stir-fry bell pepper for 1 minute, then add zucchini noodles and toss for 1-2 minutes– just until barely softened. Zucchini turns to mush fast, so don’t walk away. 
  3. Add peanut sauce and green onions, and toss to coat. 
  4. Top with crushed peanuts and cilantro
