Ingredients (for the filling):

  • 6 cups apples (Honeycrisp or Granny Smith), peeled and sliced 
  • 2 tbsp lemon juice 
  • ⅓ cup brown sugar
  • 1 tsp cinnamon, ¼ tsp nutmeg 
  • 1 tbsp cornstarch 


For the topping: 

  • 1 cup old-fashioned oats 
  • ¾ cup all-purpose flour 
  • ½ cup brown sugar
  • ½ tsp cinnamon 
  • ½ cup (1 stick) cold butter, cubed 
  • Pinch of salt 


Instructions 

  1. Preheat oven to 350°F. Toss sliced apples with lemon juice, brown sugar, cinnamon, nutmeg, and cornstarch. Spread into a baking dish.
  2. Weigh out the topping ingredients on a digital scale for consistency, then combine oats, flour, brown sugar, cinnamon, and salt in a bowl. 
  3. Work the cold butter into the dry mixture with your fingers until it forms coarse, pea-sized crumbles. 
  4. Scatter the topping evenly over the apples and bake for 40-45 minutes, until the top is golden and the filling is bubbling at the edges. 
  5. Let cool for 10 minutes, then serve warm alongside a tall glass of cold brew over ice — the perfect way to close out the day.
