It's an elegant yet surprisingly simple recipe that makes a standout summer appetizer, lunch, or light dinner. 

 

Ingredients

  • 1 lb pizza dough, room temperature 
  • 2 ripe peaches, sliced into wedges 
  • 8 oz burrata 
  • 2 tbsp honey 
  • 2 tbsp olive oil 
  • A few sprigs fresh thyme 
  • Flaky salt, red pepper flakes 

 

Method 

  1. Preheat your pizza stone in the oven (or grill) at 500°F for at least 45 minutes — this is non-negotiable for a crisp bottom crust. 
  2. Brush peach wedges with a little olive oil and char them briefly on the grill or in a hot skillet, 1-2 minutes per side. 
  3. Stretch the dough thin, brush with olive oil, and slide it onto the hot stone. Bake for 6-8 minutes until blistered and golden. 
  4. Tear burrata over the hot flatbread, scatter grilled peaches and thyme on top, drizzle with honey, and finish with flaky salt and a pinch of red pepper flakes.
