This one-pot taco pasta brings together two weeknight favorites in one cozy, satisfying dish. Seasoned ground beef or turkey, tender pasta, diced tomatoes, and plenty of cheddar simmer together in a flavorful taco-seasoned sauce, creating a hearty dinner with minimal cleanup. Finish each bowl with your favorite toppings, from cool sour cream and green onions to crunch tortilla chips, for an easy meal everyone can customize. 

 

Ingredients: 

  • 1 lb ground beef or turkey (or 2 cups black beans for a budget/vegetarian swap)
  • 1 packet taco seasoning (or 2 tbsp homemade blend)
  • 1 can (14 oz) diced tomatoes 
  • 2 cups chicken or vegetable broth 
  • 2 cups uncooked pasta (rotini or elbow work well)
  • 1.5 cups shredded cheddar 
  • Optional toppings: sour cream, green onion, crushed tortilla chips 

 

Steps: 

  1. Brown the meat in a large pot over medium heat, breaking it up as it cooks. Drain excess fat. 
  2. Stir in taco seasoning, diced tomatoes, and broth. Bring to a simmer. 
  3. Add uncooked pasta directly to the pot, cover, and simmer for 10-12 minutes, stirring occasionally, until the pasta is tender and the liquid has mostly absorbed. 
  4. Remove from heat, stir in cheese until melted, and top with whatever extras you have on hand.
