This roasted sausage, apple, and butternut squash sheet pan brings together some of fall's best flavors in one easy dinner. Savory smoked sausage pairs naturally sweet apples and tender squash, while red onion, smoked paprika, and thyme add depth and warmth. Everything roasts together until caramelized around the edges, making this a cozy, satisfying meal with minimal cleanup. 

 

Ingredients

  • 4 smoked sausage links (kielbasa or chicken sausage), sliced into rounds 
  • 1 small butternut squash, peeled and cubed 
  • 2 apples (Honeycrisp or Gala), cored and cut into wedges 
  • 1 red onion, cut into wedges 
  • 3 tablespoons olive oil 
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme 
  • Salt and pepper to taste 
  • Fresh parsley, for garnish 


Instructions: 

  1. Preheat oven to 425°F. Line a large sheet pan with parchment paper. 
  2. Toss squash, apples, and onion with olive oil, paprika, thyme, salt, and pepper. 
  3. Spread in a single layer and roast for 15 minutes. 
  4. Add sausage slices to the pan, toss everything together, and roast another 15-18 minutes until the squash is tender and everything is caramelized at the edges. 
  5. Garnish with parsley and serve straight from the pan.
