This rustic plum galette is a beautiful way to let ripe summer fruit take center stage. Juicy plums are tossed with a warm cinnamon and cardamom, then tucked into a flaky, free-form crust that bakes until golden and bubbling. With its relaxed shape and simple preparation, this dessert feels effortlessly homemade and is perfect for serving warm with a scoop of vanilla ice cream. 

 

Ingredients 

  • 1 pie dough round (store-bought or homemade)
  • 5-6 plums, pitted and sliced 
  • ⅓ cup sugar, plus more for the crust 
  • 1 tbsp cornstarch 
  • ½ tsp cinnamon 
  • ¼ tsp cardamom 
  • 1 egg, beaten (for egg wash)

 

Method

  1. Preheat oven to 400°F. If you have a pizza stone, put it in the oven while it preheats — it holds and radiates heat evenly, which helps the galette’s bottom crust cook through instead of staying pale and soggy. 
  2. Toss plum slices with sugar, cornstarch, cinnamon, and cardamom. 
  3. Roll out dough on parchment, mound the plum mixture in the center, leaving a 2-inch border. 
  4. Fold the border up and over the fruit, pleating loosely as you go. 
  5. Brush the crust with egg wash, sprinkle with sugar. 
  6. Slide the parchment directly onto the hot stone (or a baking sheet) and bake for 35-40 minutes until deeply golden and bubbling.
