Ingredients

  • 6 cups watermelon, cubed 
  • 4 oz feta, crumbled 
  • ¼ cup mint leaves, torn 
  • ¼ cup pistachios, roughly chopped 
  • 1 tbsp olive oil 
  • 1 tbsp lime juice 
  • Flaky salt 

 

Method 

  1. Arrange watermelon in a wide bowl. 
  2. Scatter feta, mint, and pistachios over the top. 
  3. Drizzle with olive oil and lime juice, and finish with flaky salt right before serving so it doesn’t pull too much liquid out of the watermelon
